  3. Gradually pour in the milk while whisking continuously, just like you would for crepe batter, until the mixture is smooth and lump-free.
  4. Season with nutmeg, salt, and pepper. Stir in about two-thirds of the grated Comté using a wooden spoon.
  5. Peel the potatoes (if not already done) and slice them very thinly. A mandoline or food processor works perfectly to achieve even slices.
  6. Add the potato slices to the bowl and gently fold them into the batter until all the slices are evenly coated.
  7. Butter your loaf pan and pour the mixture into it, pressing it down slightly to distribute evenly. Sprinkle the remaining Comté on top.
  8. Bake for 1 hour and 30 minutes. Halfway through baking, once the top is nicely golden and gratinéed, loosely cover with aluminum foil to prevent over-browning.
  9. Let the cake rest for about 10 minutes before removing it from the pan.
